Along with a new broadcaster, there is a new judging line-up and two new presenters.
Paul Hollywood chose to remain with the series while fellow judge Mary Berry stepped down along with hosts Sue Perkins and Mel Giedroyc.
Joining Paul as a judge when Bake Off returns is Prue Leith while Noel Fielding and Sandi Toskvig will present.
In an exclusive interview with Express.co.uk, reigning champion Candice said: “I wasn’t expecting it, absolute stroke of genius.
“I think as Mel and Sue were that relief and that comedy and that humanity and during that stress that’s exactly what you needed. Noel and Sandi are going to be that.
“I think it’s an absolute stroke of genius. And I love that no one knew. I love it when you can shock and I was like, ‘Yes Bake Off’. And Prue, her credentials are insane.”
After it was announced Mel and Sue had left the show, the rumour mill went into overdrive as viewers tried to guess who would replace them.
Candice was even reported to be fronting the show and confessed she was stunned to read that she would be returning to the series just one year after her win.
“It made me really laugh when that came through, I was actually at an event with Mary, and you know when you’re looking at someone and you’re like, ‘As if!’. Why are you comparing me to this one woman legend/queen?” she laughed.
“My other half was texting me asking, ‘Have you seen this?’ I was like, ‘I’m with her now and this is the funniest thing I’ve ever heard because how can we be put on the same page?’”
The 28-year-old has just penned her first cookbook, Comfort: Delicious Bakes and Family Treats, which she described as “her baby”.
Speaking about what influenced the recipes inside, she divulged: “I see things and think about things when I go to places and I think, ‘Oh I love that’ or ‘Oh I’d love to try that’.
“And every recipe in the book has a story to it and when I read it I think, ‘Oh that is still my voice’. When Liam, my other half read it, he said ‘it feels like you talking’.”

The Great British Bake Off is set to return on Channel 4 later this year.
